  12. 2-3 green chilies – slit
  13. 1-1.25 cups water
  14. 1.5-2 tbsp oil
  15. as per taste salt
  16. 2 tbsp Chole Masala
  17. For Kulcha
  18. 2.5 cups all-purpose flour (maida)
  19. 4 tbsp yogurt
  20. 1/2 tbsp baking powder
  21. 1/4 tbsp baking soda
  22. 3/4 cup approx water for kneading - add more if required
  23. 2-2.5 tbsp sugar
  24. 1/2 tbsp salt
  25. 1 tbsp oil
  26. as required some oil or ghee or butter for frying
  27. as required extra flour for dusting
  28. as required Some coriander leaves for sprinkles

Instructions to make to make Chole Kulche

  1. Soaking And Cooking White Chickpeas
  2. Rinse and soak the chickpeas in enough water overnight. Add enough amount of water as the chickpeas increase in size after soaking it. Rinse the soaked chickpeas.
  3. In a pressure cooker add the chickpeas, salt and pressure cook the chickpeas for 12 to 15 whistles. The chickpeas should be cooked well and softened.
  4. Heat oil in a pan or kadai. Add ginger-garlic paste and saute till their raw aroma goes away.
  5. Then add chopped onions and saute till the onions turn translucent or light brown.
  6. Add tomatoes & saute them till they soften and the oil starts to leave the sides of the masala.
  7. Then add the powdered chole masala that we ground, along with the red chili powder, turmeric powder & garam masala powder
  8. Stir the dry masala and then add slit green chilies Add the cooked chole. Stir well.
  9. Add salt. Then add about 1 to 1.25 cups of the stock in which the chana was boiled. You can also add water instead. Stir and cover the chana.
  10. Serve the Punjabi chole masala with kulchas.

    Making Dough

    1.Mix the maida or all-purpose flour, salt, sugar, baking powder and baking soda in a bowl.
  12. Make a well in the center. Add the curd, oil and water.
  13. Begin to mix the flour with the liquids first and then start to knead. Make a smooth and soft dough.
  14. In the same bowl or pan, cover the dough with a wet kitchen napkin and let the dough ferment for 2 hours.
  15. Rolling And Making Kulcha-
    Make small balls of the dough. Sprinkle some nigella seeds on the ball.
  16. With the rolling pin flatten the dough and roll each into a small-sized kulcha and add coriander leaves. Cook them till it gets golden spots and is evenly cooked. Make all kulchas this way.
  17. Heat a griddle or a tawa. Place the kulcha on the tawa.
  18. Cook one side partly till its 1/4 cooked. Flip and cook the other side till its 1/2 cooked.
  19. Apply ghee or oil on both sides of kulcha whilst cooking.
  20. Cook them till it gets golden spots and is evenly cooked. Make all kulchas this way.
  21. Serve them hot or warm with chole Masala.
